Epic Indian Chili Beans - My first blog post ever

Soo this is my first blog post ever, and I wanted to show you something good, something that I really really like. That is why I’ve decided to share one of my favourite recipes, the Indian chilli beans recipe. To be honest, I just love everything with coconut milk and curry, so this recipe is just perfect for me. It is easy to make, and so flavourful, I just LOVE it!

Ingredients:
2 cans of kidney beans (2x255gr)
1 can of coconut milk
1 can of tomato concentrate (140gr)
1 bell pepper
2 medium carrots
2 cm fresh ginger
fresh parsley
a handful of cashews
1 onion
3 cloves of garlic
chili flakes
1 tbs madras curry
1 ts turmeric
1 ts dry coriander (of course it is better with fresh coriander, but I had only dry coriander at home)
salt and pepper
First things first, I pour some water into a non-stick pan, and add the chopped onion, and the sliced garlic cloves and ginger. Having a non-stick pan is key, because if you have one, you do not have to use oil* and you can make your vegan meal even more healthier. Cook over medium heat for 2-3 minutes, then add the chopped bell pepper and carrot, and cook until soft. When everything is soft, I add the tomato concentrate and the spices, and finally the coconut milk. At this point the chili beans starts to smell amazing! Finally, I add the beans. If I used canned ones, I just pour down the water and add the beans, but if I use dry beans, I cook it well before.
At this point, is only takes a couple more minutes and stirs before it’s done. I usually serve it with rice or baked potatoes and add some roasted cashews, some parsley or coriander on top (depending on what I have at home) but it is really delish with some cashew sour cream as well!
