The easiest Thumbprint Cookie


I’m not particularly good at baking. Cooking is my thing, but when it comes to baking, nothing really works out. But when I tried these easy thumbprint cookies for the first time a week ago, it worked! So I decided I’m not going to experiment, I’m going to make this cookies for Christmas !

This is a super easy recipe with easy to find ingredients, I’m sure you have most of it in your cupboard already . I added homemade gingerbread spice (see the recipe in my previous post) and some orange zest to make it more Christmassy. I used strawberry and apricot jam, but you can go wild and try cranberry and orange too.

Ingredients

  • 1 chia egg ( 1 tablespoon chia seed and 2 tablespoons water)

  • 1/2 cup vegan butter

  • 1 cup + 2 tablespoons gluten free flour (I used Freee from Doves Farm)

  • 1/4 cup brown sugar (if you’re not going to put icing sugar on top, you can add some more)

  • 1 teaspoon pure vanilla extract

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 teaspoon gingerbread spice

  • 1/3 orange zest

  • Jam

  • Icing sugar for dusting (optional)

Instructions

First things first, prepare your chia egg. Mix 1 tablespoon of chia seeds and 2 tablespoons water and let it sit for 10 minutes. In a large bowl whip the vegan butter until it’s smooth. Add the sugar and mix them well. Of course you can use an electric mixer, if you have one, but it works perfectly without it. Add the chia egg, the vanilla extract, the gingerbread spice, the orange zest and a pinch of salt, and mix until smooth. Finally add the flour and the baking powder and mix until fully incorporated. Chill the dough for 10 minutes in the fridge.

Preheat the oven for 180C. Use a tablespoon to scoop a small amount from the dough and make small balls by rolling between your palms and place them in a baking sheet. You can use a spoon or simply your thumb to make imprints into the center of the balls. Make sure your dough won’t be too thin. Scoop a small amount of jam of your choice into the middle.

Bake it for about 20 minutes until it’s nice and golden. Let it cool for a couple minutes and enjoy :)

You can also dust it with some icing sugar after it's cooled, but I chose not to use, because you know...too much sugar.
