Strawberry Truffles

In today’s post I’m going to share an easy and yet delicious dessert recipe. I started to experiment with truffles a couple months ago, because we live in a super small apartment and I don’t have too many kitchen tools but I wanted to make something sweet and indulgent. To make this easy recipe you don’t need anything special, just a food processor.

Try to make it in strawberry season and pick the freshest, strongest smelling strawbs! But don’t worry if it’s not strawberry season (it wasn’t when I made them) you can add some dates for extra sweetness. I prefer using dates because it is a natural way to sweeten my desserts.
Ingredients
3 cups of strawberries
1 cup of coconut butter
3 dates (I used dried Medjool dates)
140g vegan milk chocolate
100g vegan white chocolate
A tiny scoop of coconut oil
Method
First things first I soaked the dates into hot water for about 10 minutes. My food processor is not the strongest, so it makes the whole process easier. If you have a stronger food processor/blender feel free to skip this step.
Add the strawberries, the soaked dates and the coconut butter to a food processor and blend them well. If the mix isn’t sweet enough for you you can add more dates or some sugar if you’d like.
If your mix is too soft put it into the freezer. Mine was in the freezer for two hours and then in the fridge overnight.
Form little balls and place them to a parchment paper. When you are ready put them to the freezer for about 15 minutes, because for the next step they have to be really hard.
In the meantime melt your chocolate over steam. You can add a small scoop of coconut oil to make it nice and shiny. I used vegan milk chocolate to cover the balls and white chocolate for mainly decoration (and for a couple balls too).
Keep the balls in the fridge because they melt quickly
