The BEST FALAFEL recipe


I have to admit, I love falafels. Falafel with roasted veggies, falafel with fresh chickpea salad, falafel sandwich, falafel with pita bread or… just falafel for snack. I’ve tried a lot of recipes, some of them worked, but most of them didn’t. Even when it worked it became too dry in the oven (I like baking them, instead of using oil).

But a couple of weeks ago I found this amazing recipe! The recipe is from the Happy Pear, if you don’t know who they are, check out their YouTube channel or website, they cook super delicious meals!

So here comes the recipe!

Ingredients:

  • 1 chilli (use 1/2 if you prefer less spicy)

  • 50g toasted cashew nuts

  • 2tbsp cumin seeds

  • 2tbsp ground linseeds (flax)

  • 50g coconut cream

  • 1/2 red onion

  • 2 cloves garlic

  • Juice of 1 lemon

  • Handful of coriander

  • 1tbsp salt

  • 1/2 tbsp black pepper

  • 2 cans of chickpeas

First, drain and rinse the chickpeas. Then add the ingredients into a food processor (except the chickpeas) and blend them. After that blend them again with the chickpeas. I like when it’s not too smooth and there are some whole chickpeas. As I mentioned, I’d like to bake them in the oven instead of using a pan with oil. Make little balls, and put them into the oven on a baking sheet. (I don’t remember the exact time and temperature, but you’ll see.)

I love this recipe, because the taste is just amazing and it doesn’t get dry in the oven.
